Ability to change pickup up date after the order is processed

I would like to have the ability to change pickup up date after the order is processed. This situation may arise when a customer places the order, but would need to change it or if you use only the Web store for all orders and you take the order in person for the client. You may need to put a earlier date, knowing that you can make the order ahead of the set rule.
Especially needed in the food industry.
